Tummy Pancakes
When life’s got you down or your stomach just can’t keep up and you don’t want to eat but you’re hungry — in walks pancakes. Who would of known pancakes could be so kind! They are durable - for hard days, easy days and all the days in between. Cover them in some Nutella or Almond Butter and you might go to heaven before you’re even dead.
TUMMY PANCAKES
3 flax eggs (3 tbs flax mixed with 6 tbs water, in the freezer for 2-3 minutes)
1 tbs psyllium husk
1 scoop protein powder
1/2 cup water
1 tbs agave
1/4 tsp salt
1/4 tsp cacao powder or cinnamon
1 tsp vanilla powder
Avocado Oil spray
Mix your flax egg and put in the freezer for 2-3 minutes or until “eggy” like texture is formed. Forsure no more than 5 minutes.
Mix psyllium husk and protein powder into your flax egg and then add your water. Stir it all up until you have a consistency of a pancake batter or a little thicker.
Now is the fun part! Season! Add agave, salt, cacao or cinnamon and vanilla powder. Mix it all up again.
Form pattys in your hand and throw your pancake onto your pan. Cook at a medium-low heat and flip when your intuition tells you. Repeat until you’ve used up all your batter. This will serve two moderately hungry people and one very hungry person.
